Hi this is my first time making any alcohol, so I am attempting port with elderberries first. How do you know the unit strength of homemade port? Also where is the best place online to buy you oak and other brewing bits please . Thanks Karen from Lincolnshire
 
Welcome to a super hobby.
Big start there Karen. Port.

Port is typically made from a big red wine. From there you add brandy and sugar.

French oak essence is ideal port.

What is your recipe?
Hi thank you for your reply, I have just googled a few, I wanted to use elderberries but there seems to be quite a few recipes. I think an easy recipe for me to start with, I have never made any wines or port before.

Use thick, thin, dark, oak, tawny, sweet, dry, strong, Ruby etc. We can then come up with a recipe.

Collect the berries with a steel Afro Hair Comb - and then pour them in a bucket. The rubbish floats. Discard the floaters (sorry). Dry and freeze the rest.

Next time you are shopping get some red grape concentrate.

First step is to make you a big flavour red wine.
 
When we tried making elderberry wine years ago it was very messy, colour stained everything.
And it took a long time to mature, so I hope you have plenty of patience. If I were to repeat elderberry wine now I would allow 2 years for it to be ready.

This sounds like fun. I've made elderberry wine and found it just too heavy when made with 100% elderberries. Much better when mixed with something. Why not try doing 50:50 with chopped raisins or adding blackberries and fewer raisins. You don't need to fortify it with brandy as there are wine yeasts that will ferment up to 18% abv. Mangrove Jack's K1 (V1116) all purpose wine yeast, for example.

I am going to choose tawny port, I also have some red grapes growing on my allotment, should I harvest them for making port or just buy red grapes concentrate.
