Title says it all really, I found the one below in Stout by Michael J. Lewis and I was damn, you're right!! I had been thinking about the water profile here and wondering what I should do about it to get it right for the different kinds of beers I would like to brew and the answer is a resounding nothing right now.
What are your favourite quotes from books, maybe keep it one at a time and say why you like it, but do whatever you like really :)

I generally recommend that craft brewers first use the local water as is for making their beers rather than trying to change it to some traditional formula. My thought is that a wonderful new product might arise this way
