Hey all. Got designs on infusing a gin with Pink Peppercorns, Lemon Zest, Bay Leaves and Cardamom. Anyone got any ideas on what amounts I should be using? Never infused a gin before. Probably gonna be infusing about 500ml.
 
I'd get some jam jars and experiment with small batches.
Look online for start points.

E.g. I based my first trials on sloe gin. It worked great for gooseberries, but way too much sugar for blackberries & blueberries, so next attempt I'll 1/2 the sugar.

Batches also take 3-6 months for me, so patience is the key & make sure you label them so you know what you did.
