I got some brewing yeast from a local microbrewery and he told me it was collected from the top of his last brew batch.

He gave me enough to pitch into my next brew and I was wondering if it was that simple? can I just skim off the top of fermenter each time I brew and store in sterilised jam jar & effectively have a never ending supply of fresh yeast?
 
The yeast will mutate over time but you should be OK for 6-8 batches.
You can skim some off the top (top cropping) and grow this on and split it up so effectively have an unlimited supply but it does take careful handling and storage.
