Apologies if this has already been covered,

I have a St Peters ruby kit which i bought from my local HBS, the yeast that comes with it is BYB 6g Yeast Premium.

I have been told that the yeast that comes with the kits are not that good. I have some Safale US-05 dry ale yeast 11.5g and was wondering if this would be better, if so would i use all 11.5g or measure out 6g.

PS. I tasted my 1st lager brew last night and was quite impressed 7 days after bottling :drink:
 
I would use the US-05 and use all 11g of it. . . . 6g is marginal for an effective fermentation. The only issue you may have is that US05 can be tricky to handle in that it doesn't always drop clear without crash cooling. If you have access to a nearby LHBS then try using some S-04 which would have a flavour profile more appropriate to a ruby ale.

I am nipping the shop to buy some bits and pieces so i will grab some. I dont like the sound of crash cooling (what ever that is) :)
