I've been fermenting a brew since 2nd December and of course it's been pretty cold most of the time since. The room temperature has probably moved between 15C and 20C depending on the time of day, or it might have been even lower at night. I normally brew on a Sunday with the hope of bottling 2 weeks later and usually take a gravity reading on the second Thursday/Friday to check fermentation progress. If it's still the same 3 days later (ie after 14 days in total) I bottle.
This is the first time I've used Safale S-04 yeast which says it has a temperature range of 15-24C on the packet. The gravity has dropped from 1.040 to 1.012 over the 11 days which doesn't seem too bad. The temperature has warmed up since then so do you think I might see some further significant fall in gravity over that period?
