Yeast from bottle conditioned beers

Culturing some yeast from a bottle of Shepard Neame 1698 and Schneider Weisse Tap 7.

I have used the Tap 7 yeast before and its brilliant.
Went for a litre of boiled water for each.
Used 180g of DME for each.

They have been in the demijohns for 2 days now and are well on their way.

This yeast is going to be used for some AG brews (Biere De Garde) I will be knocking up hopefully be ready in time for the Tour De France.
 
Are you stepping them up like myqul did in his guide?

I've added a Wye valley hpa style pale (it's a delightful beer imo) to my long list of beers to make, and I intend to culture up the yeast from a bottle of butty Bach. My folks are in Wales so it's easily found down there. Or of course I could just treat my dad and myself to a tour...

Will not need to step up the Tap 7. But will be stepping the Sheapards to a 2L starter as I have never used it before.
 
Think I might need to give this a whirl and get my technique sorted BEFORE planning a brew. I might try with my own bottles made with Vermont. If it works I'll save a few bob as I've got loads of beers planned using that yeast. If it fails I won't have missed a brew day!
 
I cultured the Wye Valley yeast from a single bottle of their Imperial Stout, didn't step up just went for it and it worked. Used it in my last Coopers Stout and reclaimed it for the next one. Maybe I just got lucky?

Well I thought I had some action from the Sheapards, which is on the left, but I am not sure.
Had a bit of residue this morning but not much. Anyone else got photos of their culture?

Did you put the dregs from one bottle into 2L of wort?

The SN has a large krausen. Don't have any piccys though
 
When doing this, do you guys pitch the yeast wort and all? Or do you have some method of separation?

Usually I do. When it comes to pitch the final step up I usually use my own beer wort for the step up/starter wort so just chuck everything into the remaining 21L or so to make it back up again.
 
No did a 1L starter.

There is a light dusting of yeast at the bottom.

because the yeast is stressed and there's usually not much of it in a commercial bottle of bottle conditioned beer chucking it straight into 1L of started wort might be a bit and miss. I prefer to gradually step up my bottle cultures over 5 step ups. This gradual process almost guarentee success. I've not had a failure yet.

My only experience with culturing yeast has been with German weissen beers and there is a lot more yeast in the bottle so I thought I could get away with it with the SN.:lol:

When I cultured up the SN, I couldn't even see any yeast in there so took it easy on the culturing. Even from my own bottles which have loads of yeast compared to a commercial bottle conditioned beer I still do 4 step ups
 
Both cultures have finished the 1st liter.

Going to add another liter of fresh wort ready for pitching next weekend.
