Hi guys - I've came into a lot of honey (15kg+) via my work and am thinking of putting a few demijohns of mead on. I love the stuff but price and lack of availability mean I don't get it very often.

I've only ever done ale and 'hooches' would the mead benefit from a specific type of yeast ?

there are specific strains, I guess the mead will benefit from them. But I had good results fermenting with lager yeasts at low temperature (10-13°C)
 
thanks for the reply, 10C-13C sounds perfect for my garage during the winter months - how long did the fermentation take at those temps ?
