Hello,
I'd like to find a path through the jungle of yeast strains.

I tried to find the answer with the Search tool, but the terms "Barley" and "wine" are too common : no answer.
So I dare a question : What strain(s) do you use for Barley Wine ?

Patrick, doubtful

I used the yeast cake from a bitter I had so it was a bog standard nottingham. You could use any of the ale yeasts, the choice is yours. What I would suggest is because barley wines tend to have OG of 1080 + then you either make up a starter or keep back the yeast from a previous brew, this way you are pitching a very large volume of yeast which you really need. I normally keep back the yeast from the previous brew and keep it in a 2L pet in the fridge. It keeps for ages, I have just used one today which is 12 weeks old.

Thank you for the quick answer.

So it is not necessary to choose a strain with a high alcool resistance !

I will try with fermentis S04 with a large starter (2 l).

Patrick, grateful

I brewed a Barley Wine for last christmas using the White Labs High Gravity yeast (WLP099) that i put in a starter and it worked well attentuatiing very well iended up with a beast about 10.4% from a 1.072 OG.

The main fault of the beer was adding too much demorara sugar so an aggressive alcohol kick overwhelmed quite a few flavour properties. Would definitely recommend the yeast though, need to get this years on soon.
