So I am going to do my first ever homebrew shortly and I have chosen Woodfordes wherry. I have taken advice and swapped out the packaged yeast with Mango Jacks M42 yeast.

While I was going to set up a large container and aquarium heater to bring the temp up for fermentation as I have a cool house I note the M42 packaging has a fermentation temp of 16 to 22 which is would ferment in my house which seems to have an average temp of approx 16.5 degrees.

My question is, with the yeast being fermentable at such a low temperature would my wherry brew OK without using the aquarium heater etc?

Thanks and sorry for the long winded message!

Fermentation is an exothermic reaction so it will produce some heat. If you wrap the fv in a duvet or something similar I think it will keep it within ideal fermentation temperatures. Yeast works slower when cold so it might take a bit longer but it will work. It will also give you a cleaner flavour, ie. less fruitiness than a warm fermentation.
