Hello.

I have just whisked a woodforde wherry and 250grms of light malt extract into a 21 litre oblivion which I intend to barrel in three weeks having dry hopped with east Kent holdings in secondary. Into the shed it will go and there it will stay until December. :nono:

Just thought I'd share it with you all...

I have a muntons santas winter warmer (or something like that) on at the moment. Contemplating dry 'hopping' with some cinamon, clove and a pinch of nutmeg. That may just be to in your face christmas though.
 
Just a straight Brewferm Christmas for me again this year.

Hmm...

Now a sprinkle of cinnamon sounds wicked and very festive. How much do you use, when do you use it and do you just sprinkle in and stir....

Good to hear what others are doing for Xmas....

Keep em coming it will give me more ideas.

Never done it but was thinking an inch of cinamon, a clove and a pinch of all spice or nutmeg in a muslin bag (the allspice/nutmeg would go straight in the beer) then put in beer for a few days. sample beer till desired spice is reached.

This is all theory mind and a bit of an experiment but could be go. Alternativly I may use a DJ or two to really experiment with spice addition :hmm:

allspice is amazing in christmas beer! steeping them in your beer works a treat, suspend it in some muslin on fishing line (strong and you can close the lid airtight) then like you say, take it out when you're ready. you can also soak the spices in vodka and add that, or boil them for 15 mins in water, drain the solid ingredients off and add that to your keg.

Be VERY careful with ground cinnamon, it's very easy to overdo! I found 2 cinnamon sticks was enough in a full size batch. Whatever method you use, dry roast them first by heating a saucepan/frying pan, add the spices without any oil etc, and cook them until you can smell them. brings the flavour out a treat.

Think I may go for cinnamon, all spice, clove and nutmeg dry hopped using muslin. Thanks for your advise Rob

I shall probably be making an IPA with lots of Citra to try to take my mind off the dreaded season and make me remember the long hot sunny days of this summer.

So the beer started out at 1.047.
It fermented well, sadly due to a heat wave it got a little high in the temps. After a week we were down to 1.012 and so it has been racked into a second FV with around 30g of East Kent Goldings thrown straight in. Back under the stairs for another 7 days.....

Need to really start thinking of my next one as the way to Amarillo IPA is just about done and none in reserve.....will the Xmas brew actually see Xmas... :pray:

Seems to be going well R :thumb:

I added toasted cinnimon and clove to a muslin bag am 'dry spicing' at the moment. Ground All Spce was added ontop of the brew as that is all I had but fingers crossed they impart enough/the desired flavour :pray:
 
I've never had an issue with spicing alanywiseman you'll probably find it takes quite well after a few days of steeping. plus your ground spice will sink to the bottom after :thumb:
 
Im doing the santas winter warmer aswell, looked at the brewferm christmas but was put off by the short brewlength. Plus ive heard you really need to age it for up to a year so id be looking at next christmas

Planning to put the brewferm christmas on at christmas for next year but was going to do 2 at the same time :thumb:
 
Beer is barrelled. Used a siphon with muslin bag over the end and no trouble sucking it all up through the EKG's. 100grms of brewing sugar and she is now under the stairs and will be there for the next 3months.

I guess the next update will be the day I'm putting up my Xmas deckies with a nice pint of wherry. I really must get another on or the temptation will be too much.

have popped the brewfrem christmas kit on yesterday. Now I know you will all yell it won't be ready in time, but it's being brewed for July. We have an event that we do every year and the theme next year is christmas so this should be ideal by then :cheers:
