WOW - When to stop fermentation and rack?

Help for a newbie please...?

Making my first few batches of WOW and all looking good so far...

My first is a 4.5L batch in demi john and is 7 days in now...

1L White Grape
3/4L Orange
1/4L Pineapple
and I also chucked in a small handfull of sultanas
800g sugar and all the other stuff at the start


It's still happily bubbling away and I took a hydrometer reading and it's 0.991 which is really dry...

Do you think I should leave this to continue on (and if so for how long)?

OR

Do I rack it and stabilise etc...?

Just don't want something full of nasty aldehydes lol...

Any advice would be appreciated.

I would suggest that you leave it for at least another week to let those yeasties finish off and clear up. It has already fermented out to dryness and the gravity isn't likely to fall by more than another 2-3 points.

Give it chance to form a more solid sediment, otherwise you will lose too much volume on racking.
 
Thank you for your help Moley. I put a few others on the go at the same time with some variations of the recipe substituting mixing the orange with pineapple, one with pair & orange, one with tropical juice and some tinned mandarin (an experiment), one with orange & apple... so will post how these turn out if they are all ready to rack next weekend.......all still bubbling lol!
