A good find, provided it contains no preservatives. Yeast can tolerate a small amount of sulphite, but not sorbate. Pressed elderberry juice will have less tannin than fresh or dried berries which have been fermented on the pulp, so the wine will need less time to mature, but will have less colour. Therefore red grape juice concentrate, say 250 ml at least, would be a good addition, plus 2 litres of apple juice to give it more body. Some sugar will be needed. At a guess, about 500g plus yeast and nutrient and oak chips would be most desirable. The acidity should need no adjustment.
