Wort started to ferment without added yeast

Hi

I made 20 litres of bitter wort on Saturday, Bitter, (21st Nov) but the sachet of yeast I had (Gervin) did not start to ferment.

I removed some of the wort (250ml) into a glass jug, added tsp suger and then the sachet of yeast and left.

Nothing happened, no fermentation started even after 24 hours.

Was going to buy another sachet of yeast this morning but noticed the main bain batch of wort had started to ferment on its own!

I did not add anything to it so must be some natural yeast from somewhere.

Not sure whether to still try another sachet of yeast and add or to leave it alone to ferment.

Anyone else seen this?
Any advice welcome.

The yeast that you added on the 21st has begun to ferment your beer :thumb:
Some dried yeasts especially those that have not been correctly stored can have a long lag time before they show signs of fermentation :(
My advice for next time is to buy your yeast from a source that has a big turn over and who store there yeasts in refrigerators ;)

Interesting, do you suggest me storing any yeast that I have access to, in the fridge? Would a normal fridge work etc?
 
Yes, all yeast should be stored in a fridge . . . even dried . . . in fact if you buy in bulk there is nothing wrong with storing dried yeast in the freezer . . . as long as you take it out the morning that you want to use it (12-24 hours before use)
