Following on from my earlier thread, I had a go a couple of weeks back at brewing a Christmas version of my blue moon clone. Basically the same recipe but with some ginger, cinnamon and nutmeg added to it. Recipe as follows:
Grain:
1.79kg Bohemian Pilsner
1.75kg Wheat Malt
600g Flaked Oats
210g Acidulated Malt
210g Caramunich II
240g Oat Hulls
I started with RO water and added some salts, gypsum etc. to give a fairly low mineral water. The acid malt is a new thing for me to try and better control my pH
I uses around 21g of Hallertauer Mittelfrueh at 60mins, 15g ground coriander seeds at 10mins, and 48g orange peel, 1tsp cinnamon, 1tsp nutmeg and 30g ground ginger, all at 5mins. Fermented with US-05
All went pretty well, though overshot the SG to 1.061 (target 1.052) but hit the FG of 1.008.
Just gone in the keg. Initial samples emphasised the ginger, but will see how it is at the end of the week.
