I have a few different wines on the go, Nettle wine, Oak leaf wine and grape and peach juice wine, all have been fermenting for 3 weeks now and don't seem to clearing or bubbles slowing down. Should I force these to stop and clear or just let them take their coarse?

Three weeks for a grape and peach juice wine is not unusual, if you have a hydrometer 995 or below for me is done, if you don't have one let it ferment until its only bubbling every two or three minutes and then stabilize and degas, you can let it clear naturally (many months) or force it to clear using finings, it will clear in a few days rather than months.
