Why is my Christmas Belgian ale doomed not to be brewed :(

I had a lovely yeast starter all ready to go propagated from Chimay red :drink:
I had everything lined up apart from some amber malt, which was on order hopefully to be delivered today
So I delayed my brewday hoping for the courier to arrive.
At 1.30pm I thought it's getting a bit late I'll brew something different :hmm:

So as I have a notable hop head visiting at the end of the month I thought that I would brew something in his honour :thumb:

I give you:
Wednesday Mild
40L OG 1.039 20 IBU a.b.v 3.8%

5.5kg Pale malt
700g Crystal malt
250g Wheat malt
95g Black malt
70g Chocolate malt

90 minute mash @ 64C

40g Pilot Hops 7.8% aa 90 minute boil
20g Glacier hops 5.8% aa 15 minute boil

Oh and due to sods law just as I had finished doughing in the mash, the courier turned up with my amber malt and the rest of my order

Oh dear! Ah well, nothing wrong with a mid-week sunny afternoon brew - and the only good FV is a filled one.. not knowing much about beer styles, what would you classify this one as?

All went well :D

Time to wait and see now :thumb:

Not a silly question ds it is indeed lagging for a hot water tank :thumb:
It works like a dream and it rolls up and stores away beautifully

I used a cylinder jacked just like the one T S is using on my previous mash tun and wrapped it in duct tape, it was a great little tun.

Nice set of pics once again, i love the colour of it going into the fermenter :thumb:

There didn't used to be, but I put a couple of layers of camping mat on the Bucket. It doesn't work too well and looses heat so the tank lagging was brought out again :thumb:
When I find a 40L bucket to build a bigger mash tun the only insulation will be the tank lagging

All finished fermenting :thumb:
Tastes good from the trial jar :drink:
I'll drop some finings in tomorrow and have it in the keg by the end of the week

Kegged 38L at 1.010 so 3.8 % a.b.v :D
Dropped clear, a nice deep mahogany colour :D
Good coffee notes and malt sweetness :D
Long lasting head :D
A bitterness that hits 10 seconds or so after swallowing, maybe a little too bitter for type :hmm:
I'll give it it's full maturation time and try it again on Friday
