I did my second brew on Monday and was starting to panic because there was no activity for 24 hours.
I was cursing the fact that the yeast given to me was different to the last one.
I looked yesterday and it's really taken off, with a layer 1'' thick on top.
I presume that the LHBS knows his stuff and has given me this for a reason, it's Gervin ale yeast, why would he change that?
This brew is with 250g of DME this time because the last brew with only 100g of extract was described by him, as 'thin'
He has tried to give me a TT landlord type recipe as that is the kind of taste I like.. any thoughts?
Do I just leave the layer alone? I have resisted the temptation to lift the lid so far.
 
leave it alone let it do it's thing. nk good can come from messing with it at this stage.
