I currently have 6 gallons of apple juice and yeast fermenting away for the last 6 days. We did not add campden powder at the start or anything else. Please could someone help me with the next stages?? Do we wait for the bubbles to stop and then take a gravity reading? Will I add campden powder after fermentation? How will I bottle the cider what's the process and what needs to be done??? Total newby and really in meed of some help. Don't want to mess it up. Thanks
 
Just wait till its stopped bubbling completely. the bubbles mean its still converting sugar to alcohol - fermenting. you c an stop this early by popping in a campden if you like and leave a sweeter andlessalcoholic drink if you prefer. if notthrow a capden in when it has fully stopped any activity for a few days. pop it in a cold place for a week or so if you prefer it a little clearer. or put it straight into bottles. or as i often do pour it straight into a glass taking some but not much care to leave the sediment in the fermentor. stumble and shout.
 
Fermentation stopped on wed. Day 10. I have not had enough time to bottle or do anything to the cider. Will it still be ok?? Shall I transfer it to another bottle before bottling. Confused. Hope haven't spoiled it.
