12lb apples
5 gallon water
10 lemons
8lb sugar

smash apples and place in Fermenting bin and add water to 5 gallon
leave for 7 days stirring morning and evening

strain and press apples add juice and zest of lemons
Add sugar

leave over night then strain again and bottle corking LIGHTLY for approx 5 weeks then tighten tops should be ready to drink approx 1 week later

I haven't done this for over 12 years and will be bottling mine sunday so in 6 weeks will give a verdict :drunk:

forgot to say should be approx 7 to 7.5%

kwl and what did it taste like ?
 
I had a bit of a problem with the first batch as it stuck and it was a real hassle to get it to ferment out finally did and its been bottled and at first look its quite lively when poured but VERY dry has more of a wine taste to it have found that it is quite palettable if mixed with lemonade
opinion is divided some like some don't

Will make it again but in smaller quanitity and use less lemon
