Which yeast?

If you were to choose just 1 yeast to use for ales IPA's (etc) which would it be?

WLP023 - Burton Ale . . will do everything from Light Ales through to Barley wines . . . bit of a pig to settle though

Sorry got to cheat as I need 2

For lagers it has to be WLP833 - Southern Bock Yeast from the Ayinger Brewery
 
S-04 its a hungry beast.......
ferments off very quickly ( can be aggressive I'm told ) easily reaches gravities of 1.010. and settles out solid on the bottom of the fv, so much so the vessel can be tilted 45 degrees and more and it still doesn't move.
I don't know its technical statistics but I've had no problems with it at all.
Last brew I used Nottingham and it was not so good when settled out.

I've just done a couple of brews with this - found it tricky to settle, hoping the first has now cleared. Both also escaped the FV :shock: Tasting may commence this weekend..

The reason im asking is because i'll hopefully be harvesting from my next brew, AG#1 so wanted to get a general purpose yeast that'll do most the things i like.

Aleman, not after doing lagers as i prefere a chilled IPA in it's place more flavour and aroma and if i fancy a lager guzzling session i'll purchase 8 Stella's :oops: .

I like the sound of the S-04 for it's sediment solidity and the fact that it'll ferment most things :thumb: :cheers:
 
I've always got on exceptionally well with S04 - never had a stuck brew and always ferments out well. Sticks like I don't know what to the bottom of the FV as well - great for getting the last drop off of the trub.

However if you want a sweeter beer it might be a little too dry - mine come out at around 1.005-1.007 normally (which suits me fine), whereas Notty should be more like 1.010.
 
If i want a sweeter brew can i not just mash at a slightly higher temp to get more none fermentable sugars?
 
there is a reason s-04 and s-05 are popular- they work bloody well- s-04 can be a bit bready/english to some people mind (i personally reckon it doesnt attenuate as much as notty-a gd thing in my book)-i do like london ale 3 aswell (fantastic settler and gave wonderful apple and plum flavours to a triple kit i made into a ipa ish thing yet in lower abvs it is more balanced and is a more balanced flavour than s-04)- and that burton ale is nxt on my list when i get a new order in-settling can prob be sorted by a secondary easy
