Ok I am doing this tommorow a clone of proper job IPA

What yeast should i use Nottingham (what I always use and Like) or should I be adventurous and go with US05?

Never used the US05 but i realise it may be more appropriate to the style.

What are your recommendations.
 
All I know is US-05 is meant to come out dry and crisp as hell.

I've got an award winning recipe for an American IPA that uses the same hop combination, that recommends WLP001 Calafornia Ale - very similar to yours so might be worth a look!

Mash at 154 for 60min. I had 70%eff
American Rahr (2 row) Pale: 11.50lbs
American Briess Crystal 20 1.00lbs
American Briess Light Munich 0.75lbs
American Briess Carapils 0.75lbs
American Briess Torrified Wheat 0.25lbs

Chinook (Pellet) 1oz 30min
Cascade (Pellet) 1.5oz 30min
Williamette (Pellet) 0.5oz 15min
Cascade (Pellet) 1.5oz 15min
Williamette (Pellet) 1oz 5min
Cascade (Pellet) 2oz Dry in secondary
 
I used US-05 for mine, but you would be good with Notty. I do a Jaipur clone with Notty which is very good.
 
Proper Job is a bottled conditioned beer, and I think it's the primary strain so if you could get a couple of bottles I would use the yeast from them.
 
us 05 is perfect as is white labs san diego super yeast. I wouldnt say us o5 leaves the beer dry at all or crisp. Ive used it about 20 times and it cleans up the beer well and gives a rich pale ale.
 
Well I used us-05 fermenting away nicely. I ended up putting in some oats (darceys fault) and using a bit of chalenger for bittering as I was short of the other hops.

I guess i'll have to do a pale + oats now rather than just talk about it! Fancy a bottle swap!?
