I've generally been using S-04 dried yeast but am considering a liquid yeast for my first, and subsequent AG's. Is there a good all-round yeast comparable to S-04 that I can use, harvest and use again? I'm planning a Rauchbier for my first followed by a Speckled Hen and maybe an Old Peculier...

English Ale Yeast WLP002?

WLP002 is very good, much better than S-04 or Nottingham. I find I does attenuate really low though. Consistently around 1.004!

If you're moving to liquid yeast for the first time don't even bother with Wyeast. Always always use White Labs.

I've never ever had a Wyeast pack turn out like it should. White Labs is perfect and works every time without all the mucking about smacking this and that.

Go with White Labs all the time.

Well i just got me some london ale 3 in a ancient wyeast activator pack and had a great couple of weeks trying to resus it-didnt help i didnt have any malt extract in the house and it arrived popped  but finally got a couple of spare bottles of it about and a 9l beer on the go (defo a gd krausen for top harvesting and smells lvly) it would also attenuate to about the same as s-04 so if after a dry beer will need to mash a little lower--63 - so yeah get some whitelabs off the maltmiller and no worrys about it getting popped in the post and no arsing with starters unless u want to (someone posted a great how to, on making a load of 330ml fridgeable starters up from a mother 4l culture to give u alot of quality 2nd gen yeast cultures to make starters with vs 2nd gen washings off krausen which then need further growing and the like)

Don't forget about Brewlab, http://www.brewlab.co.uk/ they have a huge database of yeasts and are very helpful. A yeast slant costs £5, but they make it up for you and post it out within a few days, so you get a very fresh batch of yeast. Make a starter with 300ml water and 50g DME 24-48 hrs before, and this will be rearing to go in your brew. The most important thing with yeast for the home brewer is yeast health, so with these slants you get a yeast in excellent health. I would highly recommend them. Also White Labs.
