Looking at doing a lager for the summer. Last year's Stellar Tortoise came out pretty well so I'm sticking close to that, although have had to change the hops around a bit to fit with what I have...

Stellar Tortois 2 (Bohemian Pilsener)

Original Gravity (OG): 1.054 (°P): 13.3
Final Gravity (FG): 1.011 (°P): 2.8
Alcohol (ABV): 5.59 %
Colour (SRM): 3.4 (EBC): 6.7
Bitterness (IBU): 37.7 (Average)

95.52% Pilsner
4.48% Carapils (Dextrine)

1.4 g/L Hersbrucker (5% Alpha) @ 90 Minutes (Boil)
1.4 g/L Saaz (4.2% Alpha) @ 90 Minutes (Boil)
0.4 g/L Hersbrucker (5% Alpha) @ 10 Minutes (Boil)
1.1 g/L Saaz (4.2% Alpha) @ 10 Minutes (Boil)

Single step Infusion at 67°C for 90 Minutes. Boil for 90 Minutes

Last time Fermented at 12°C with Saflager W-34/70

I'll dilute my Leicester tap water down 2:1 with reverse osmosis water from the tropical fish shop to get the mineral levels low enough

I'm looking at a liquid yeast this time just to see if I can get the quality any better (although I was very happy last time)

I could use
WLP800 Pilsner Lager Yeast
WLP802 Czech Budejovice Lager Yeast
WLP830 German Lager Yeast

Does anyone have any experience of these and can advise me on which might be best?

When I brewed my last pilsner (which still isn't ready despite being brewed ages ago, damn lagering), I had planned to use WLP800. But my starter didn't work out and Dunfie came to my rescue with a couple of vials of WLP830.

The result would appear to be my best lager yet, based on the taste I had when bottling it. So using WLP830 in a Czech-style pilsner seems to work just fine!
