I'm already thinking ahead for Christmas.... :? I'm wanting to make a strong Belgian brew, which I know will taste infinitely better with some good maturing time. The obvious choice is Brewferm, but which one??? I'm thinking either Diablo, Grand Cru, or Triple. Any suggestions..?

Ok, I can't recommend one over the other, because I've only done the Brewferm Abdij kit, and even that was only bottled last night! I've seen praise for all, but for my pennysworth, I prefer the Belgian fruitiness in the darker stuff, especially if you're putting it away for the Winter / Xmas. And that's from someone who has had a (golden) Duvel tonight. I wanted something along the Rochefort line, and a quick taste when bottling the Abdij yesterday certainly showed I'd got the right kit. Really recognisable style, fermented at the high (25C) temp to get the esters and whatnot.

Only problem is building enough stock to keep my hands off it... :D

Take a hammer to the piggy bank, throw caution to the wind and do them all!!

That said I have a double grand cru (18Litres ) in a secondary FV at the moment and it tasted pretty good when i syphoned it off it will be about 7.8% when done I think - Bottling sunday then putting away for the festive season!

Don't they do a Christmas one? Might be appropriate. I did the Triple once upon a time and it was pretty good.

Yes, they do a 'Christmas' one!

I'm probably doubling up my next one too.

I heroically forced my way through around 30 multipack 330ml bottles of supermarket stuff ahead of the Abdij, so around 60 more for the double-up!

:drunk:

Only done the Grand Cru myself, that was a good beer......eventually. Whichever one (or more) you decide to do I'd get cracking and get it brewed, these strong Brewferm kits are great but they do need a long time in the bottle.

I'm after something like Duvel, so I'm thinking the Grand Cru. Does it clear, or is it cloudy? Do you reckon there is enough time if I start it after the w/e until Xmas for it to mature?

Plenty. I was drinking my Triple within weeks.
