When to clear...

Hi all,

Thanks for your communal help and advice so far. You may be able to tell that most of my queries follow the same trajectory as wine takes to bottling...

So...with that in mind, I have various fruit wines, all finished fermenting and bulk 'aging' in their djs. Rhubarb, strawberry, blackberry, peach...

All been racked at least once off the sediment. Twice for some. At each racking a campden tablet added.

Most have been degassed by giving them a good shake/release/shake/release...

Do I need to, or, when do I need to think about adding clearing paraphernalia? I have kwik clear at the ready...

I may need the djs soon so I may bottle a couple shortly.

My method is - rack, add stabiliser, degas, add finings and bottle after 24/48 hours when clear.

If you are going to use kwik clear or youngs clear it get a thin syringe from your chemist as you only use a small amount a teaspoon is way too much.

I continue to play catch-up. A couple of my wines are still in their djs and have not been degassed yet...some two or so months since racking off the sediment - and fermented out.

I believed it was ok to 'bulk age' in the DJ, rather than bottle.

The djs have bored bungs with a cotton wool filler.

No finnings have been added.

Should I actually now add finnings and once clear, bottle?

If yes, should I add another campden tablet at any point?

If you want it fast use fining if not it'll clear on its own.

You are only supposed to use campden every other rack
