Hey All. My IPA finished its primary fermentation on Friday so I left it in the basement at around 7c to help clear. Last night I syphoned it into my Corny and put in 25g of citra/simcoe. My dad arrives this weekend so was hoping to get it carbonated, would it be beneficial to condition this for a few weeks or is it ok to carb straight away?! I also have a few mates over 8th December, will it still be ok by then.. Provided I haven't drank it all!

Thanks

You want to make sure the air space at the top of the corny is full of CO2 straight away, give it a shot of gas then pull the pressure release valve on the lid. Repeat this a few times to make sure all the air in the space above the beer has been replaced with CO2.

Once the beer is under CO2 it will keep for ages, when you up the pressure to force carb doesn't matter as much

Ah yes, I did purge it a few times as I only had about 14 liters left as I put the rest in a demijon with some other hops.. Also want to see how the bottle conditioned version differs from the corny.

Thanks for the info Dave, guess it should be fine for 8th then
