When to bottle: Ginger beer ????

I have brewed some Coopers ginger beer. All good there

Took a measure today, brew at 19°C and FG at 1.010 (so not bad there)

BUT it tastes kind of sweeter than I would like and there is a lot of big bubbles on the surface of the brew (like bubble bath).


Should I bottle now or give it a few days extra grace?
 
if its still got action leave it, then take another reading check to see if dropping , if not bottle ,if dropping leave more then test again and so on
 
How long did you let it ferment?
You should measure the gravity 2-3 days apart and if it stays the same it finished fermenting. It doesn't matter if it stays a bit longe rin the fermenting vessel as long as you can wait.
 
I think that the Coopers Ginger Beer will taste sweeter even though it has fermented out. IIRC it contains an artificial sweetener (which is why it can't be sold in the USA)
