One of my fav recipes is 3kg pale wheat malt 2kg of Pale ale malt (or pilsner malt , i use belgian) and around 200g of something sweet like carahell . I like wlp300 and also wlp380 yeast the best too.

How many litres is this for? Can I replace carahell with crystal malt? Can I use a dry yeast such as Danstar Munich?

Hi this is for a 23l brew and i get around 5/5.5% , ibu around 12/15 and aroma hop like hallertaur around 2- 3rds for bittering and 1-3rd for last 15 mins , any light or medium crystal for a touch of sweetness or if a drier beer wanted no crystal and mash at 64c (68c for malty ) and danstar is ok i've read , not used but wb06 was pretty good but i'm a liquid yeast all the way when it comes to wheat beer my fav is wlp380 and wlp300 ferment at 22c but if a crisper wheat wanted ferment wlp351 at 18c
 
Thanks for the info pittsy. I will have to give it a go. I've tried a few wheat beers and generally find them a bit sweet, but Warsteiner was nice.
 
The sweet sensation comes from very low bitterness and high esters, you'd be surprised how dry these beers are. Wheat yeast usually ferments down to 1.008 or even below (from 1.051 or so). The same beer fermented below 19c will be perceived drier than the one fermented at 20c.
 
I am doing a Paulaner Hefe Weissbier clone on Sunday.

3kg German Wheat Malt
2.5kg Pale Malt
150g Dark Munich Malt
35g Hallertau Hersbrucker
Wyeast 3056 Bavarian Wheat Yeast

90 min mash at 65.5
90 min boil with hops from the start

24l into fermenter
5.4% ABV
IBU 10
SRM 5-6

Simple but should be nice and refreshing for summer
 
good luck , i would be careful how much munich you add (if it's munich 3 ) it has a strong raisin taste going on , i would drop to 50/100g or if it's munich 2 that'll be fine as is . :)

Thanks for the heads up mate - will drop it to 100 and up the 2-row.
