Like a kid on a Christmas morning getting up and checking the brew first thing. No matter how much I brew still get the same buzz to walk into the fermenting room and seeing the ferment underway.

I normally use a stainless fermenter but I did a small batch of brown ale and fermented in 2 glass demijohns and I’ve opened the fermenting fridge a dozen times to watch the yeast doing its thing lol
 
Mash is on.

V2 of my Oatmeal Porter. Loosely adapted from a Deya Hokum Stomp recipe

71% MO
7.5% Oats
7.5% Amber
5% Aromatic
5% Chocolate
2% Dextrin

First Gold to about 30 IBU at 60m with a further addition at 10 and again at flame out to finish about 37 IBU

US-05 yeast

Aiming for 1053 OG and a final abv around 5.4%

Brew day done.

OG a touch low at 1051 but an extra half litre or so in the bucket. Perhaps the boil was a little less vigorous today.

Ah well, an extra bottle is a fair exchange for a small drop in ABV!

I also put the flame out hops in a bit late, trying to minimise bitterness. They were still largely undissolved pellets at the end. May need to rethink my hopsteeps. Not too worries though given a Porter won't depend wholly on the hops and the wort tastes good. Every brew day is a school day.
 
BHE a bit poor on the Admiral IPA, ended up with 9.5 litres @1053 OG. I suspect this is down to the batch size, and relatively high grain/water ratio compared to normal. But, on the other hand, it looks and tastes fine, decent colour, pretty clear, so all good, I think.
 
Old Speckled Hen clone by orfy. Using ANZ ingredients.
5.7 kg Gladfield Ale Malt
0,300 kg crystal 60 L
0.250 kg Gladiator malt
0.450 kg invert sugar #2
0.080 kg brown sugar.

15g Pilgrim hops 60 mis
18g Challenger hops 60 mins
20g EKG 10 mins
15g EKG dry hop.
Overshot OG so will be diluting with 420 ml of boiled water.

That Admiral IPA, it's gone from 1053 to 1010 in 48 hours!

I'm not sure I'm entirely happy about that. Anyway, it got racked to demi-johns pdq.
 
Double brew day for the first time.
21 Litres Tokyo Lager
11 Litres Traquair House ale

probably won’t repeat the double brew it can get confusing as I used two sets of equipment and ran almost in parallel one in garage and one in utility room. I staggered the boils to reduce the electrical load. But forgot the brown sugar addition in the Traquair until I spotted the lowish OG. Added in with some boiling water. The OG’s were
1046 and 1071 respectively.
 
Late night brew day today.
Brewing another hoppy Belgian Pale. Low colour MO, Spelt & malted wheat. hops- Challenger & Adeena in the boil and will have a dry hop of Idaho Gem and Adeena.
Experimenting with a 50/50 dry yeast combo of T-58 & CML Norsk. Seen some feedback that T-58 is a bit variable with its attenuation so I'm hoping Norsk will help it along and mellow the Belgian character a little.
