The second of the Belgian beers I wanted to try first, this one an 8% Tripel. Here you see I’ve poured the clear beer into a glass and then swirled the rest of the beer with the sediment to taste. The two actually taste very similar but the yeasty version is just a little less dry and a touch creamy. This is a nice beer with no hint of alcohol, lovely esters, mild bitterness, and there is a mild taste of candy sugar.

They are, or were, one of the Dutch Trappist breweries along with La Trappe. But I feel like I read recently they had lost their designation/accreditation. (But I may be confusing them with someone else).

Edit - I was wrong. Achel (Belgium) and Engelszell (Austria) are the two to recently lose the Trappist designation.

Well...when you're doing all that table polishing it can easily happen.

When I tasted it I was very confused - it seems to have lost all of it’s Belgian character. In fact it tastes hoppy and a little bitter…BLOODY *****! I’ve poured a Pipster Pale! It’s nice but not Belgian 😂
 
A couple of pints of my Guinness clone it’s just a pity the head isn’t pure white but other than that very close!
What recipe did you use for that? I'm considering trying a small stove top AG dark stout or Stella style lager. I have a recipe for the lager but not one tied down for the Guinness style, there seems to be a lot of variation to recipes I have seen for dark stouts.

Quite a simple malt bill really

Clear choice Ale malt -70%
Flaked Barley. - 20%
Roasted Barley. -10%

Target hops for bittering to 39 IBU’s at start of boil



Yeast Nottingham

Mash at 66°c for 60 mins
Mash out 75°c for 10 mins
60 minute Boil

Fermented at 19°c 14 days
Cold crashed
Carbonated with CO2 at 5psi 7 days then 70/ 30 mixed gas at 35psi to condition and serve
 
Having re read your post you might want to try the ‘Genius Irish Stout kit’ by Hampstead home brew. I haven’t tried it but it has received great reviews

Ah ok thank you, will add that to my watch list for later. I was looking to use thr coopers irish stout kit with a small boil addition to the kit malt extract and maybe some coffee, but open to any new ideas.
