I went with what I had to use up. The bramling leave a lovely blackberry taste on the back of the bitterness of the magnum. The Zeus add some bittering but are lost against the magnum.Great timing, was looking for American Stout recipes, malt bill much the same as what i've been thinking, though might chuck in some special B. Hops i'm looking at Chinook and Centennial.
Oh aye a sneaky saison entry.Went out to the garage for a lucky dip. I found a 12 box of mystery beers. Turns out to be a lemon and rosemary saison I brewed a year ago. When this was young the rosemary was overpowering. It's actually aged very well, the carbonation is probably to high

They have aimed for the barrel aged market and high abv. Decent price as well, had the porter and red aleFinishing off with a whisky barrel aged imperial stout. 10% and thick and creamy with the woody peaty burn of a good malt. A nice beer. View attachment 65845
Thanks Foxy was confident that you would like it. I am trying to get my dad to install a Fromagerie on his dairy farm. I have never made cheese but would like to. Can't be any harder than making beer, could it?Finishing up a brew day and cleaned up decided to try Eskdale's Baltic Porter. I did give fair warning that I wouldn't pull any punches.
Not an easy beer to brew so here we go, poured nice into the glass lovely aroma, molasses and malt, initial sweet taste with a back of the tongue bitterness from the hops. Not knowing the strength realised this is a high ABV beer. Had to sip and savour it, a great example of a Baltic Porter with good lacing and head retention.
I have only made this a couple of times and understand the difficulties in getting this right. A very nice drop. Well done.

My mind is wondering againComing from West Yorkshire we also call them pikelets - more the older generation than mine though. I call them crumpets. My mum was born in 1947 and my dad in 1939.
