Anyone ever attempt making a vermouth? I'm interested in trying most things. This one calls for wormwood (ah, but not too much as it can cause kidney failure!) Along with spices such as cardamom, juniper, coriander and chamomile. I'd have to avoid making it a fortified wine as I will not be distilling (unless some neutral white alcohol like vodka could increase the abv without colouring the end product)

As far as I can make out, you start with a dry white wine then add ingredients but some vemouth makers add the spices when the must is being fermented.

wormwood is one that I always want to add, but can be really poisionous and fermenting really draws the thujone out of the herb so you never know the safe levels. Can't find a fermenting recipe for vemouth, but you could add those herbs to a white wine in the later stages.

Thanks for your thoughts on this one Tau.

There's a fascinating world of chemistry involved in intoxicating consumables. The history of absinthe being favoured by artists and the like owing in part to the effects of the wormwood in combination with the alcohol is well documented. I don't see the same connection with the wormwood addition to vermouth on its own but combined with the juniper so prevalent in gin, vermouth makes for a rather wicked cocktail!

And has it the possible visionary affects as well then ?
