When I brew, I do small batches - 1 gallon at a time - so the recipe usually calls for half a package of dry yeast, eg Nottingham (11g packet) or Safbrew S-33 (11.5g packet). On my last brewday, I vacuum-packed the left-over half of yeast (I left it in the original packaging and vacuum-packed the lot). It's still well within date and it's only just over a week since I last brewed. I've stored it at room-temperature. My question is now, will it be any good? If so, for how long do you reckon it'll be good?

yes it will be fine, i just rehydrated some s04 that went out of date in April. Why don't you make small starters with the packet yeast let it ferment right out then bottle and store in the fridge. Either do it that way or vac seal like your already doing. As long as they dont go beyond best before date should be ok.
