could I use steam to do a step mash? I was thinking of hooking steam to lauter tun drain system on a cooler. then just add hot water and grain to get to the protein rest then hit it with steam up to next temp without adding more water. Think it would be like doing a decoction. Then disconnect steam and sparge. Does anybody see any draw backs or just waste of time? Thanks in advance for all feed back, good or bad, bad is probably best. I'm sure it's been done just haven't seen it.

Common practice in some commercials, good way to add heat without thinning the mash. Getting the distribution across enough of the mash bed is important
