I`ve used us-05 once before and had no problem with it - yeast dropped and when bottled it came out really clear , i just used protafloc in the boiler. I`m fermenting a brew at the moment and a week in its down to 1010 so has finished but all the yeast is sitting on top of the brew - i skimmed it off and it has reappeared ? should i just leave it - i won`t be bottling till wednesday anyway or should i skim the top?

If the yeast head keeps re appearing it hasn't finished fermenting ;)
USO5 it a highly attenuative yeast so it may ferment down lower than you expect.
Leave it a little longer and it'll drop when it's done :thumb:

Ok quick update - still some yeast on top (9days in ) and the hydro is 1004 :shock: seems really low as the expected FG was around 1012 i think :thumb:

It does look a bit low. What does your hydromoter read when you pop it in water at 20C?
 
I bet your hydro's right. I've had the same problem with US 05 in the past, as it happens, with the same targets and results. I skimmed that brew twice and had to use 2 lots of keg finings to get rid of the yeast. The brew was too dry. I had this problem with 2 brews.

I've now taken to crash cooling my fv after at the desired gravity and that's sorted that problem out. Even when I warm the beer back up the yeast stays put.
It's just an very keen yeast and unless you have the power to cool it at your desired target it's going to be hard for you to stop it.

Cheers V - i remember you saying in a previous post about this, i skimmed the yeast head yesterday and it has not returned - also checked my hydro and its bang on, i`m gonna bottle this tommorrow and see how it turns out - last brew with this yeast did clear so will see what happens, so this could turn out a little dry / thin but its a well hopped pale around high sixtys IBU so these will shine through :lol:

Being the sadist that I am I now exclusively use US 05 for all my pale ales and bitters, love it, it's so clean tasting compared to S04, though 04 is a great yeast.
I would use liquid yeast for bitters, but my brew days are so 'ad hoc' it would be silly to try and time a starter with a brew :roll: :lol:

it finished at 1004 and its all bottled so really looking forward to it :drink: :drink: :drink: :lol:
 
I often use US-05 to make fake lagers and ferment cool. Even at 17 degrees it still hangs around for ages on the top of the brew, although not as thick as yours, and as Vossy does, when my patience runs out with it I rack to another vessel and crash chill it for a week or 10 days and it waves the white flag and stays on the bottom :clap:
I once used it in an emergency to make a Ruddles County attempt as my liquid yeast failed to take off, and it was a bit underwhelming, but it makes a great faux lager in half the time of a true one.
