I recently brewed up an American version of an old ale and needed only 1 1/2 packets of US-05 yeast. Not long ago I bought a dry hopped mead that was awesome and wondered about giving it a 7 min aroma boil instead of dry hopping, and so I figured I'd make a 1.75 gal batch of mead boiling only 1/2-3/4 lb of my honey in the water for this aroma addition. Has anyone ever tried a beer yeast for mead? It's 8.8% ABV so it's within the alcohol tolerance of the yeast.

I've actually found a few people who have successfully used ale yeasts, including the US-05. Another was a hefe yeast that was liked. The dry hopped mead I've bought from the local farmer's market also uses ale yeast, though he wouldn't say what yeast he uses.

The flavor profile is different when using an ale yeast though.

One thing noted is that the turn around time is quicker it seems.

I've had a champagne yeast in my fridge for some time to prompt us to make a mead. Yet to do it though...
