I am thinking about getting a mill and buying grain whole. Can anyone tell me how long will 'nomilled' grain stay good? Can you store it in a cupboard open at room temperature, or should it be air tight and cold?

At our watermill we store our grain in dustbins in a cool dark place, as long as it is stored like this it will last a long time. In the past we have used grain that was almost two years old. So storing for a few months is no problem.
