Decided while i have 2 carboys just screaming out for me to fill them so i'm going to make some cider for Xmas.

I found out during the house move i lost my cider yeast, so im going to mix some champagne and wine yeast together to get the fix and the alcohol.

4.5 Ltrs of Tesco pressed Apple Juice
500g sugar.
Yeast mix

Top up in a few days with more apple juice

You're going to be pushing it to have this ready for Christmas! Add 1/2 tsp tannin (or a strong cup of black unsweetened tea) and a tsp of malic acid. Once it's all cleared add a tsp of splenda per pint and prime and bottle.

A medium cider will disguise some of the bitterness. A dry cider made now won't be drinkable until spring at the earliest, even tc. :cheers:
