Hi.
I've been making the following recipe which is my first go at a turbo cider:
23lt Vitafit apple juice (from Lidl - it was cheaper!)
2tsp yeast nutrient
2tsp citric acid
1tsp malic acid
1 lemon (cut into 4)
10 chunks crystalised stem ginger (chopped)
0.5kg sugar
1 sachet Harvest SN9 yeast
1 cup of very strong black tea
I have just racked it to another FV and added priming sugar, ready for bottling. I have sampled a bit of it and it has quite a citrus taste and is also quite sharp.
Will it mellow at all once it's bottled? Or do I need to be adding some kind of sweetener to it?
Also, there are some large chunks in the sediment that resemble pineapple chunks! I'm thinking they are from the ginger, although I did chop it up quite small.
