I have picked up my Demi John and an airlock today along with my cider yeast, I'm going to be using a strong cup of tea for the tannin. But I completely forgot about the yeast nutrient. how vital is the nutrient will I be able to get away with it, or is it best to wait until I have the nutrient.

i did quite a few brews without nutrient when i first started and never had a problem. so i wouldnt worry too much and get it for next time
 
Thanks for the help. Another quick question how much Yeast do I put in, the whole sachet?
 
Not having nutrient will just add a day or two to the ferment.
The yeast won't stay fresh once opened, so you may as well put it all in. Unless you're making more very soon, when you might get away with splitting it in half and resealing the other half quickly before too much atmospheric moisture gets at it.
This is why I always make 2 gallons, I split the yeast across them.
 
I've managed to split a cider yeast packet between 3 separate gallons without any problems. Also, if I've opened a sachet but don't use all of it, I've just folded it shut and chucked it in the fridge. Had one in there a good while before I used it without any starting issues.
 
I usually save half the yeast packet for another day - tape it up and store in the fridge, probably best used within the week; I used a 3-week old half packet once and it worked just fine once it got started in water. Cider yeast has worked fine for WOWs too so you dont necessarily have to make another cider. It can be an infection risk though if you get moisture or dirt into the packet when storing, so just be clean about it :)
