Following on from my first "long" brew becoming infected and knocking my confidence I decided to get myself a dj and make a turbo cider to see how it went.
The contents of it are

3 3/4 litres of asda apple juice
1 jar of lidl "maribel" strawberry jam
1 mug of strong tea
Teaspoon of youngs super wine yeast

OG of 1.060
FG of 1.002 over 2 days

I think this is ready to bottle now but there is a lot of debris on the top ( looks like it may be the fruit out of the jam).

My question is this, am i better leaving it longer and waiting to see if the bits fall to the bottom or should I pop my tube through it and siphon the cidery goodness from below it now so I will have a half decent drink bottled for new year ( it tastes pretty good already :D )

Thanks in advance,

Zed.

I've had huge amounts of chunky debris before and have siphoned off with no problems. A gentle tilt to the DJ will help you get the most of the booze out. If you mess up and bring some through just rack again after it has settled out.
