Torrefied wheat

I`m hoping to be brewing my 3rd AG at the weekend - i was hoping to include some torrefied wheat but my LHBS doesn`t stock it! (they do have a great range of stuff though!) would wheat malt have the same effect for head retention or not :wha: would it make my brew cloudy?

Also what effect does flaked maize, flaked wheat and flaked barley have on a brew?

I find that it does and does not impose that breakfast cereal taste that comes with torrified wheat. . . . Flaked wheat does the same thing as well.

Flaked maize is a nitrogen dilutant . .. it is used when you are using a high nitorgen base malt (not that they come around that often) traditionally US 6 Row . . . Its a flavour component of Classic American Pilsners, unlike Flaked Rice it adds flavour to the brew . . . Flaked rice is a flavour and nitrogen dilutant.Flaked wheat and flaked barley really aid the head formation and retention abilities of beer . . . flaked barley is more flavour neutral than wheat and tends to be traditional in stouts where its tendancy to throw a haze is not that important . . . Flaked wheat is used in bitters and milds for the same thing. . . . . both are higher in protien content than malt so should be used with caution <5-10% of the grist in beers that are supposed to be clear.
