Hi All,

I'm doing another kit soon but can't decide which to do, i will be storing it for a minimum of 4 months due to me not drinking until SWMBO can join me after our little one arives.

I have 3 that i will be doing over the next 3 months (1 a month) which are Woodfordes Admirals Reserve, St Peters Ruby Red Ale and a Muntons Gold Premium Bitter.

Which one would benefit most from a longer storing period and also which one is your favourite and why, Flavour, body bitterness (etc)

I don't know about the others but the woodefordes are very drinkable pretty much after clearing, so you may struggle to keep it for that long!

Not speaking from experience here, but I would go for the ruby red, being a darker ale the harsher flavours would come together with decent ageing.

Generally darker, stronger beers need more time to mature. As a rule, for every .010 points of gravity, you need 1 week for every 0.010 to condition - 1.040 would be 4 weeks, 1.070 would be 7 weeks - and that's just minimum.
