Some advice please. As you can tell from the image my IPA brewed yesterday is fermenting like crazy, but I'm about 2 litres short. Could I top up with water now, or should I wait until the fermentation has calmed down a bit? Thanks.

That is an impressive fermentation! But assuming that when you put the recipe together you wanted to achieve a particular level of alcohol content and bitterness etc., why do you now want to water it down? (quite apart from the risk of contamination). If it were me I'd just package what I had .

I fully agree.

Superb fermentation you've got going on there. You can add water (liquor back) at any stage . Although it's actually fairly difficult to (unintentionally) infect your brew. If it was me I'd wait till fermentation had finished
