Ace-8 Elderflower wine.
was meant to be elderflower champagne. Fermentation got stuck, or more likely completely messed up recipe and resulted in a 11% syrup.
Therefore, Re-fermented with high % tolerance yeast. left it too late in the demijohn to have a (tertiary?) fermentation in bottle. So resulted in still elderflower wine at around 18+% (given my current state)
