As I bottle some wine tonight that had been sitting for much longer than I typically leave it before stopping and bottling It dawned on me.

Time and patience are the two single biggest things I’ve learned so far during the brewing or wine making process.

And for someone who has little patience it’s taught me a lot.

Bottling at the right time is a skill to learn swiftly.
Too early is a killer.
Better to wait and reap the rewards !

Yup - I've oft thought that the instructions which come with kits, where it says 'additional items required' should also include 'patience'! So many would-be brewers who have tried and failed by following wildly-optimistic instructions. It's sad.

I want to brew a bock but the idea of it tying up my fridge for 6-10 weeks is a bit depressing. Would lagering it in the shed be fair?
