Tiger beer (Lager) recipe

So, having found my stash of empty 330ml Tiger bottles, I thought I’d like to try making a lager to fill them with.

I’m thinking:

3.5kg Lager malt
100g Crystal
500g Flaked Rice
200g Caster sugar

30g @ 60 mins Hallertau Hersbrucker
20g @ 15 mins Hersbrucker
10g @ 15 mins Tettnang
10g @ 0 mins Hersbrucker
10g @ 0 mins Tettnang



Saflager S23

Fermented in brew fridge at 12 degrees (will one pack of S23 start off OK at 12?)

Never brewed an all grain lager - didn’t get great results from kits before I had the brew fridge.

Any advice?

I very much doubt that the recipe has that many late hops, if any at all. If I were trying to be authentic then I would bitter to about 20-25 IBU and then maybe a small flavour addition around 15 minutes and that's all. However, I love hoppy lagers so I'd actually brew yours and probably prefer it over the original!
 
Do you think a small starter at 12 degrees would be a good idea? I’ve got some DME left over from kit brewing.
I’ve never got involved in starters or reusing yeast, but seriously considering to reduce brewing costs & before experimenting with liquid yeasts!
 
I too would recommend two packs of yeast if fermenting at 12c, and best to rehydrate them if possible.

I haven't had Tiger in a while, but IIRC it's a very pale lager so not sure the crystal would be good if you're trying to clone it. If you don't care then it looks like a good recipe for a dry lager.
 
If it's any help, the basic recipe from an old David Lines book is based on 2500g lager malt, 650g flaked rice, 60g Hallertau for a 90min boil, producing 20 litres of wort at OG 1.035, but includes no crystal malt. It also comments it is sweeter than most lagers. However David Lines includes saccharin tablets in many of the recipes in his book and this one has 10 tablets. aunsure....
 
I would ditch the sugar and the crystal unless your going to use a small amount of carapils. You can up the rice as well if you want.
make a starter at room temp if you only have one pack of yeast. Make sure to decant the wort before pitching.

That looks better on the hop schedule as I have found that lagers do take on the bitterness IBU's more readily than most other beers( the IBU's have nothing to hide behind in a lager as they are very plain) and can appear too bitter. If you want a little sweetness try adding a small amount of lactose instead of the saccharin tablets or just leave it as is and see if it suits
