My beer has been fermenting for about a week now and has now formed a thick layer of yeast on top of the beer - not the white frothy stuff, I've had that. This is more like the sediment that normally settles on the bottom! I used a whitelabs Burton Ale yeast for the first time so am not sure if this is what it does. Basically any advice about whether this is normal and how I should now proceed as I now want to rack the beer into the barrel as it's reached the FG of 1.010.

Many thanks,

Thats what it does, lovely stuff try a spoonful good for you too sterilise the spoon first though.

Best thing you could do is scoop a load of it off and put it in a sterlised container that will hold a bit of pressure, put a bit of the wort in with it and stick it in the fridge for your next brew.

You can pretty much keep it going indefinatly as long as you are extra clean and careful. (sterilise everything that will collect or contain it.

That's your yeast, nothing to worry about! If it's finished fermenting, give it a few days and it should sink down to the bottom and then you can rack the beer off.

Many thanks, I am now re-assured and will definitely try saving it.

Heres one I did last weekend I am going to skim it in 1/2 hour or so.

Does it look similar to yours?
