The price of yeast.

As great a job as the Muntons kit yeast is doing in making my bread I thought I'd order some bread yeast. I got 500g of bread yeast delivered for £5.95. I will pay about the same to have 11g of beer yeast delivered and I can't see what would justify us paying 50 times the price for yeast that bakers do. Maybe beer yeast is a bit more specialised but 50 times the price seems very steep especially as I have a feeling that Mauriplan and Mauribrew are probably not too distant relations to each other.

I'd imagine it's not going to be as alcohol tolerant as brewers yeast and they dont have to worry so much about being microbe free because the heat of the oven will kill any nasties but don't let me pee on your chips :oops:, If it turns out good you've done us all a great favour :thumb:

At the moment it's just for my bread, I'm not sure I'm brave enough to risk a full brew with it. Saying that though I did once knock up some of Craig's prison hooch using bread yeast and it attenuated just fine and it ended up at about 10%. It's just with beer yeast being 50 times the price I can't help but feel we're being taken to the cleaners a bit.
 
I reckon if you used it for long enough, and kept several samples in the fridge after each brew, just in case it devloped a mutation you didn't like, you could selectively mutate a house yeast for yourself. Initially, it would probably resemble a weak farmhouse ale but I think you could compliment bready flavors using spices rather than hops. The characteristics will be wildly different to what you get from the well-honed ale yeasts of today, but that doesn't mean that it will be bad at all. I would try making small batches of a low abv(maybe 3%) table beer for a few generations at first and see how it copes.

A lot of old farmhouse beer was probably made this way and they probably used the same yeast for their bread and ale. In the 19th century a lot of bakers got their yeast from breweries, believe it or not.

Perhaps you are buying beer yeast from the wrong place, crossmyloof sell for less than £2 inc p&p
 
Nottingham, S04 etc are cheaper in 500g packs for example from a Charles Faram price list about a year old.
S-04 £26.98
US-05 £30.68
Nottingham £31.23
Cheapest is Safcider £15.71 most expensive Belle Saison Yeast £61.59. Within the fermentis range the price goes from £15.71 to £53.26 so there is some reason why some cost more than others but no idea what. I imagine bread yeast is cheap as most strains work fine for bread without having to do any checks.

ahh! i've used kit beer yeast for bread but wouldn't want to risk the other way around :grin:
 
Back to the "drinkable" and "palatable"! :lol: :lol: :lol:

Back in the early 80's I managed to drink many pints of beer made from ordinary malt extract and bread yeast with zero hops in Saudi Arabia.

I well remember the taste and aroma. It was drinkable (obviously) but it wasn't very palatable and I can't recommend it.

However, as I didn't have access to hops maybe that was the problem rather than the yeast; but I don't have sufficient nostalgic memories of the brew to spend hours of my time trying to replicate the taste or the smell! :nono: :nono:

perhaps invest a tenner or so in Chris Whites excellent Yeast book

as well as a mighty fine read it has been known to inspire many home yeast banks ;) using slants or slopes you can keep a stash of 20+ strains banked in a sandwich box in the back of the fridge ;)
meaning you only ever need to buy one sample of any variety ;)

I re-use whitelabs liquid yeast. Today I pitched a 10th generation WLP028 Edinburgh starter. And some people reckon liquid yeasts are expensive.
 
I am on my third brew with a s-23' and fully intend going to at least 5 if not more brews with it, happy with that

I've just ordered a ten-pack of California Common dry yeast from Crossmyloof via ebay - �£7.50 inc. postage. That's cheap enough to use without harvesting.

By continuing a yeast strain I find it improves and develops the strain. I am currently drinking a beer I first brewed with the second harvest. The recipe is the same, mashed and fermented at the same temperature, same water profile. The current beer, ninth generation, is showing a depth of character and generally a more rounded taste as the yeast has acclimatized to my conditions. If I wanted cheap decent beer I would just go to a supermarket or just brew with a dried yeast but I want to drink better than that so will put in that bit of extra effort. Yeast harvesting is not hard or time consuming so I fail to see why you would not want to make the best beer you can.

This is exactly it!

This is not only a hobby it's a journey from the ordinary beer to extra-ordinary beer consumption (I'm referring to quality of ya brew not your consumption rate).
